A metric ton of sweet potatoes

OK, only 6.13 kg (13½ lbs.)  There was a whole extra bag of 19 sweet potatoes outside the box this week.  Luckily, they keep.
  • Arugula
  • Beets
  • Carrots
  • Cauliflower
  • Kohlrabi
  • Leeks
  • Lettuce
  • Radicchio
  • Sweet potatoes    
  • Rutabaga
  • Spinach

  1. They roast beautifully. I peel and cube them, and toss with thyme, paprika, a smidge of cayenne pepper, garlic powder (real garlic will burn before potatoes cooked) and salt. Yummy. I've also done them mashed with a bit of lemon juice. You can ALSO make a really lovely root veggie soup; I usually put in potatoes, sweet potatoes and winter squash.

    We got a celeriac yesterday. That has me scratching my head.
